Surfing the Grocery Shortages

I’m off in the summer, but this year amidst Coronavirus restrictions I feel as busy as ever. One thing that I need to keep on top of is the flow of groceries with all three of us eating at home every day.

In the times before (as my daughter calls pre-COVID life), if you needed something it never crossed your mind that the store would be out of it! Now the oddest things are out of stock.

Paper towels – every time I order them I get a surprise substitution. My last curbside pickup substituted paper towels made from bamboo! I don’t mind these “green” substitutions because they charge me for the cheaper brand I requested.

Canned goods – Did you know there is a shortage of aluminum cans? This article’s headline just sums up 2020, “Oh Great, Now There’s an Aluminum Can Shortage, Too.” If you prefer your beer or soda in a can, you’ll want to get on this. Apparently the issue is the volume of drinks being purchased for the home instead of being served in bars and restaurants. I’m a little nervous for my evening seltzer water habit, and I am picking up extra when they are available.

I try to grab a canned fruit and soup or two each time I have a grocery order; these also can be in short supply.

Pizza – many areas have frozen pizza shortages. I know I have tried to get some Jacks’ Naturally Rising Pizzas since March to no avail. We do have a crust manufacturer in our area and they had some issues with virus spreading in their factory. I imagine having people at home means more demand for pizza. I pick them up when there is a good price.

My husband usually handles our Amazon subscribe and save order, so I have been very good about telling him when I am opening a product from our pantry so he can adjust our order as needed. COVID is fairly high in my state, and I’m not likely to go in person to the store. Since March, I went to Trader Joe’s once, otherwise I do curbside or delivery.

Personally, I try not to let news of shortages send me off buying things we aren’t going to use. There has been a shortage of dried beans, but I rarely use them. Same with yeast… it doesn’t last long, and no sense buying it now when I haven’t made bread in a few years. It’s not a good deal to stock up if you aren’t going to make use of the item in the near future.

What kind of shortages have you experienced where you are? For the longest time we could not find nacho cheese sauce. Then my daughter found a Tik Tok of a family covering their whole dining room table in tortilla chips and making the entire thing nachos. So that’s where all the sauce went!!! Monday – Garlic Mushroom and Zucchini Shrimp with Pasta

Tuesday – Chili – I will try to make enough for two meals

Wednesday – Ballet!  Make your own sandwich night with a variety of options

Thursday – Jamie Oliver’s Curry (I make mine vegetarian with chickpea and cauliflower)

Friday – Veggie Burgers, Falling Rock Cafe-style (on a pretzel bun with sweet onion and a mustard-mayo sauce).  Must serve with chips and a pickle!

Monday – Tuna salad, deviled eggs, pea pods (time to use up those colored hard-cooked eggs!)

Tuesday – Homemade chicken fried rice and Trader Joe’s egg rolls

Wednesday – Make your own sandwich night

Thursday – Spaghetti and turkey meatballs (the Trader Joe’s marinara sauce is delectable!)

Friday – Dinner out!

My daughter has been playing an old MS-DOS game called “The Oregon Trail” (play for free at Internet Archive). Her characters, whom she names “Axel” and “Emily Rose”, are constantly dropping dead from cholera, dysentery, and starvation.

The game warns of meager rations and that is how things look around our house. It’s been super cold here with negative temps and -25F wind chills. When it warms to above 0 degrees it snows and then it gets Arctic-cold again. It was a good week to have a solid meal plan and groceries in the house because I haven’t been anywhere except to work.

Our breakfast this morning was salvaged from a meeting at work yesterday. . .Oh yes I did! The muffins that had been out since 8 AM were looking like they were a heartbeat from the trash. This morning they were more appealing than plain Cheerios anyway.

We are headed out today on an all-family grocery shopping expedition and I’m almost giddy at the prospect of leaving the house.  “Axel” is harnessing the oxen and with a little luck we will cross the river without drowning!

Back to work and back to school this week.  I used my time off of work to get a meal plan rolling for the next two weeks.  I don’t think I have ever been disciplined enough to do that.  I usually am more prone to “wing-it” but between wintery weather and work, I knew I would be kicking myself if I didn’t buckle down and do this!

Sunday – Guinness Shepherd’s Pie – a new recipe for me.  Usually I don’t have Sunday in my weekly menu plan but I wanted you to see this recipe!

Monday –Pea soup and grilled cheese

Tuesday – Chicken Fried Rice

Wednesday – Chili (made and stored in freezer – woo-hoo!) and crusty rolls with honey

Thursday – Quiche using a new recipe and fruit.  First time making quiche for me!

Menu Plan Monday – Sept 22

Monday – Haircut night, meeting Dad for a sandwich dinner out!

Tuesday – Fajitas, to use up tortillas, beans, cheese, sour cream we already have.  One chicken breast will be enough for all of us in combination with beans.

Wednesday – Greek salmon salad, to use up salmon patties in the freezer.  Combined with romaine, feta, olives, and “Good Seasons” Greek Vinaigrette

Thursday – Sloppy Joes, already in the freezer from a prior meal

Friday – ‘Cheaters’ Cuban Sandwich, boiled ham, provolone, mayo/whole grain mustard, pickles in the Foreman Grill.

Menu Plan Monday – May 19

Summer break is just around the corner and it is really time to firm up my menu planning muscles.  I’ve been going into weeks lately with a general idea of meals, and relying on scampering off to the store before school gets out to pick up anything I am missing.  This is a lot more tedious when there are two of us heading off to the store!

Mon – Shrimp and twice-baked potatoes using our garden chives, and a vegetable side

Tue –  Spaghetti (veg) with mushroom and black olives, garlic bread, salad.

Wed – Tuna salad, lettuce, deviled eggs

Thur – Black bean and cheese quesadillas with all the fixings

Fri – McDonalds!  Why?  Friday is the start of Isabelle (American Girl) Happy Meal toys.  For more information see Doll Diaries

Slow Down Saturday

Wowee, what a week.  It’s such a blessing to be home all summer with my girl, but such a rude awakening when it is back to work and school.  This was our first full week of school and work. By about Wednesday my daughter was longing for a vacation to Washington, DC.  I find that when we have the urge to go on a vacation, what it usually means is: “I miss living life without so many obligations.”

We did decide that we could take some money from my checks and put it into a vacation fund that we can watch grow.  This might be a good introduction to our budget process for our daughter.

Today we are taking it easy as we are under orders from Laine’s teacher to “recharge our batteries.”  This is advice near and dear to my heart.  The next best thing to a vacation is being home without a massive to-do list and errands all over the place.

Meanwhile, we had a good week with our budget.  I wasn’t enthusiastic about cooking some of the nights this week, but having a meal plan really helps.  It is important that I continue to cook most meals at home or my checks will be used up in dining out costs!  I continue to monitor Quicken to make sure that my working isn’t causing a rise in grocery spending due to lack of meal planning.

On a humorous note, my most interesting google search that brought someone to my blog  this week was ‘getting laid at home’.   Pretty sure they didn’t get to the page they were looking for, but maybe they stumbled on a good Jamie Oliver recipe as a result.
