Menu Plan Monday 9/30

Chicken Pumpkin SoupHappy Monday!  I wanted to give you an update on the Chicken and Pumpkin soup from last week’s menu plan.  Delicious!  It will definitely will go into the dinner rotation.  It was super easy because I already had chicken cooked in the freezer.  It has a silky texture like a butternut squash soup but without the sweetness.  Watch out on the chipotles in adobo though.  They can be super hot!  Next time I will just use chipotle powder.

Monday – Jamie Oliver’s Chicken Fajitas

Tuesday – Hamburgers on the grill.  It’s going to be 80 degrees F and sunny!

Wednesday – Dine out

Thursday –  Daughter requests Sheryl Crow’s Warm Hummus Soup

Friday – Spaghetti and home-made garlic bread

Menu Plan Monday – Sept 2

I designed this meal plan around ingredients that we already have at home.  Hoping for a week with less grocery shopping and expense.

Monday:  Labor Day in US.  Leftovers from my mom’s house.

TuesdayJamie Oliver’s Curry.  A solution for the abundant kale in the garden.  We make the curry vegetarian with chickpeas, cauliflower and kale.

Wednesday: Grilled burgers with my precious Hatch Green Chiles from New Mexico

Thursday: Grilled cheese and pea soup

Friday:  Make your own taco salad night… made fresher with choices of black beans, oven roasted corn kernels, avocado, crisp Romaine in addition to the usual suspects of cheese and chips.

Menu Plan Monday 7/29

vegiscabbage-graphicsfairy009Happy Monday!  Some menu plans just write themselves.  This was not one of those weeks!  I had Monday locked down but the rest of the week was a quandary.  Here we go:

Monday:  Orange Chicken, Rice, Broccoli

Tuesday: Jamie Oliver’s Curry.  A solution for the abundant kale in the garden.  We make the curry vegetarian with chickpeas, cauliflower and kale.

Wednesday: Received a coupon via email from Pizza Hut for large 1 topping carryout for $6.55.  Sounds good to me.  Arugula salad from garden.

Thursday: The Best (and Easiest) Black Bean Soup. Cornbread.

Friday:  Breakfast for dinner, which could be eggs, turkey sausage or pancakes with blueberries

Day 2, ‘Appreciate and Maintain What You Have Week’ and I am loving it!Daylilly

So far . . .

I put away the 8 different sunscreens on the bathroom sink, left one out for convenience, and found a spot for a garden lilly.

The Lego Friends’ Village has been relocated!  A handful of legless and armless Disney figures have also found a place to hang out other than my living room floor.

My daughter and I had lunch and “tea time” on the front porch both days.  We used my Emma Bridgewater tinware and made a regular lunch a little more fancy.

Garden Lunch

My husband has been having breakfast in our sunroom the past few days, enjoying the views of vegetable garden, flowers and trees. It’s a great feeling to use all of the rooms in your house and not be paying for more space than you need.

Sometimes when I slow down a little, it helps me feel more energetic and creative.  I sent a few emails out and a neighborhood “Ghost in the Graveyard” (tag) game will be underway tonight. Look out XBOX, here comes an ‘old school’ game.

JamieOliverI reduced the tower of magazines under the living room end table, and moved my cherished Jamie Oliver magazines to the bookshelf.    It looks so wide open now!

Most of our dinner tonight will be free.  I had to switch up my meal plan after receiving free items from a friend going out of town.  We are having frittata with kale, green onions, and potato; sourdough bread, and citrus fruit and apple salad.

Menu Plan Monday – May 6

I’m kicking the week off with a recipe that will take advantage of some of the great Cinco de Mayo prices on Mexican foods.

Monday – Smothered Chile Colorado burritos – definitely the best thing to come out of my Crock Pot.  I use WAY less bullion.

Tuesday – Weight of the Nation for Kids airs after school so in honor of healthy eating we are having Jamie Oliver’s Chicken Korma from his Food Revolution Cookbook.  We’ve made the recipe so many times we now skip the chicken and use chickpeas, spinach, and cauliflower.  Serve with naan.

Wednesday – Daughter has standardized testing tomorrow so fueling up with her favorite Twice-baked Potatoes and Shrimp.  My chives are up in the garden!

Thursday – The always popular Eggs/Breakfast for dinner.

Friday – Planning a fancy lunch out for husband’s birthday.  For dinner it will be choose your own cereal or PBJ sandwich.

Menu Plan Monday – April 15

orgjunkie_bannerThis week’s menu uses very little meat.  I will use 2 chicken breasts divided between the Monday and Tuesday menu items.

Monday – Jamie Oliver’s Fajitas – a family favorite I serve with black beans

Tuesday – Sesame Peanut Noodles  from the book Cook Yourself Thin: Skinny Meals You Can Make in Minutes (Voice) – I serve them warm, not cold.  I am able to re-use some of the same ingredients as the fajitas.  I add lots of extra veg!

Wednesday – Soup night!  Daughter requests Sheryl Crow’s Warm Hummus Soup – I never bother with the pesto or the croutons.  The coriander is a must though!  Super easy.

Thursday – Baked Ziti (vegetarian)

Friday – Night off for me – we will dine out somewhere budget-friendly
