Menu Plan Monday – November 4 – Kid’s Choice!

This menu plan may seem a bit redundant to you.  Let me explain…  This week my daughter has testing all week as a result of our state adopting the Common Core of studies.  Basically, these are national education standards that are assessed in 3rd, 4th, 5th, 8th and 10th grade. She has 5 days of testing next week, and the tests aren’t easy-peasy by any means.  ‘What number is 5/9ths of 45?’ She thought it might be comforting to design her own menu of favorites, so here goes!

Monday – Shrimp and twice baked potatoes (baked Sunday night during cheap electricity period!)

Tuesday – Jamie Oliver’s Fajitas

Wednesday – Quick meal to go after Girl Scouts

Thursday – Pumpkin Pancakes, again!

Friday – Hot dogs are requested… not sure I am ready for that again, but we do have them on hand and we’ll see how things go!

Menu Plan Monday 9/30

Chicken Pumpkin SoupHappy Monday!  I wanted to give you an update on the Chicken and Pumpkin soup from last week’s menu plan.  Delicious!  It will definitely will go into the dinner rotation.  It was super easy because I already had chicken cooked in the freezer.  It has a silky texture like a butternut squash soup but without the sweetness.  Watch out on the chipotles in adobo though.  They can be super hot!  Next time I will just use chipotle powder.

Monday – Jamie Oliver’s Chicken Fajitas

Tuesday – Hamburgers on the grill.  It’s going to be 80 degrees F and sunny!

Wednesday – Dine out

Thursday –  Daughter requests Sheryl Crow’s Warm Hummus Soup

Friday – Spaghetti and home-made garlic bread

Menu Plan Monday – Aug 5

This week I felt I was hitting the meal-planning wall a bit.  It seems like I already just made everything!  I had to get out the loose-leaf binder jammed with recipes torn from magazines to get a little inspiration going.  The Southwestern Cobb salad came from this binder.  All meals include a side of zucchini.  Tis the season!

Monday – The Amazing Broccoli Cheddar soup (less fat) from the cookbook Super Natural Every Day: Well-Loved Recipes from My Natural Foods Kitchen.  This is my favorite soup recipe.  I think I can sneak some kale in there too.  Don’t skip the whole grain mustard in the soup – essential!

Tuesday – Swim Team Banquet.  I predict Mr. Saver will be enjoying peace, quiet, a Simpsons episode and take-out burrito in our absence.

Wednesday –  Jamie Oliver’s Fajitas with refried black beans.  This recipe is a mainstay in our home. Jamie never disappoints!

Thursday – Cookout – bratwurst, baked beans and zucchini

FridaySouthwestern Cobb Salad from Cooking Light Magazine.  In place of the turkey I will throw a chicken cutlet on the grill with Thursday night’s dinner.  This is a recipe I have made before – easy and delicious with summer veg.

Menu Plan Monday – 6/17

This week I aim to get back to more vegetables in our meals.  I feel I ought to have the time to be more thoughtful about this now that I am home for the summer with my daughter.

Monday – Jamie Oliver’s Fajitas with refried black beans.  This recipe is a mainstay in our home. Jamie never disappoints!

Tuesday – Make your own big salad with leftover fajita chicken as a topping choice.  I am making the AMAZING home-made salad dressing – Honey Chipotle Vinaigrette.  You must try this, but go easy on the chipotle until you give it a taste-test.

Wednesday – Egg Fried Rice – giving the extra vegetables from the salad on Monday a home.  I hope to use my bok choy from the garden which is on its way to bolting.

Thursday – Bike race (as in bicycle) – we will grab some sandwiches and go watch.  Free and fun!

Friday – Hamburgers and whatever fruit and veg we have left at the end of the week.  I have some hamburger buns in the freezer that need to see the light of day!
